Marinade the Chicken: Whisk all of the marinade ingredient together in a large bowl or freezer bag. Add the chicken and turn to coat. Marinade in the refrigerator 4 to 24 hours.

Remove chicken from fridge and let set in counter for 30 minutes before cooking. Prep the grill.

Heat the grill to medium-high heat, 425 to 450 degrees. Clean and grease the grates. Grill for 5 to 7 minues per side, until the chicken is cooked through and the internal tempeature reaches 170 degrees.

Transfer the chicken to a cutting board and let rest for 10 minutes before chopping into small pieces.

Warm the tortillas in the micorwave, in a skillet, or on the grill until warm and pliable.

Now let's build a taco.....layer the tortillas with the chopped chicken, guacamole, pico de gallos, adn cojita. Serve with lime wedges and hot sauce.
