Instructions
  • 1 Puree the avocado with the lemon juice, water, olive oil, and 1/2 tsp. Salt.
  • 2 Toss the cabbage together with 1 tbsp. salt and let sit for 1 hour. Rinse then dry well.
  • 3 Toss the cabbage, corn, poblano peppers, green onions, and dressing together on a large bowl.
  • 4 We use this coleslaw excllusively with our Cajun Pulled Pork Sandiwches!
