Pulled Pork with a Cajun Twist

Whisk the water, ketchups, vinegar, molasses, 1/4 cup mustard, and 1 tbsp. brown sugar into a 7 to 8 qt crock pot.

Combine the remaining 1 tbsp. brown sugar, paprika, 1 tsp. salt, and the black pepper in a small bowl. Rub this all over the pork shoulder then add the pork and the diced sausage to the crock pot and cook on low for 8 hours.

Remove the meats and set aside to cool slightly. Skim off the excess fat from the cooking liquid, then strain into a large skillet and bring to a boil. Cook until reduced by one-third, about 15 minutes.

Shred the pork with some forks an coarsely chop the sausage. Toss the meats wtih enough of the reduced cooking liquid to moisten, then season with salt.

Whisk the mayo and remaining 2 tbsp. mustard in a small bowl. This will be the spread for the buns.

Build sandwiches by piling the meats on a bun that has been lathered with the mayo/mustard sauce and top it all with a heap of the Southwestern Coleslaw.
