Roasted Garlic Mashed Potatoes

  • 1 Preheat oven to 350 degrees.
  • 2 Cut just the top off of the head of garlic to expose the cloves. Drizzle with olie oil, salt, and pepper. Wrap loosely in aluminum foil and bake for 45 minutes or until golden brown. Remove from oven and let cook for a few minutes. Squeeze out the garlic into a bowl, it should have the consistency of mayo.
  • 3 Add the potatoes to a large pot and fill with water to it is about 1-inch above the potatoes. Cook until tender, but firm. Drain and place back into the pot for 10 minutes. Throw in the 2 tbsp. of butter and let melt.
  • 4 To the pot with the potatoes, add the roasted garlic, milk, sour cream, and cheese. Season with salt and pepper and blend together with a hand mixer, or with a hand masher. Add milk to loosen then up if needed.
