Cuban Black Beans & Rice

  • 1 Cook rice according to the package directions. You can use chicken stock in place of water to add more flavor.
  • 2 Heat the oil in a saute pan over medium-high heat. Add the onion,bell pepper, salt and 1/4 tssp. Black pepper and cook for 5 to 7 minutes. Add the garlic and cook for 1 more minute.
  • 3 Stir in the cumin and cook for another minute.
  • 4 Add the beans, oregano, and 1 cup of water. Simmer, covered for 10 minutes.
  • 5 Add the vinegar. Smash some of the beans with the back of a fork to thicken. Serve over the rice. Top with the radishes and cilantro.
