So I basically started emptying my produce drawer into a food processer and pulsing everyting down to a fine mince (that's why all the ingedients say miniced). This is the only way I can able to get my daughter to eat vegetables. So process all the vegetables (except canned tomatoes) into a fine mince.

In a dutch oven, heat the olive oil over medium-high heat. Add all of the processed vegetables and cook for 5 minutes until softened. Add the garlic and cook for another minute. Add the tomato paste and cook for yet another 3 minutes.

Add the canned tomatoes one can at a time and crush the tomatoes with your hands. Add the dried herbs and stor to combine. Season with salt and sugar.

Before the sauce gets really hot, I use an immersion blender and blitz the sauce smooth.

Bring to a bubble,then reduce the heat to low, cover, and let simmer for 2 to 3 hours, stirring ever so often.

You do not have to let it simmer for hours, but it does help develop the flavors a ton more. It is also great just heat and serve.
