Dixon Family Recipes - Spinach & Mushroom Salad with a Sweet Mustard Vinaigrette

Another of Daddy's Favorite Salads

The Dressing

3/4 cup Vegetable Oil

2 tbsp. Mayo

1/4 cup Sugar

1/4 cup Spicy Mustard

1/4 cup White Wine Vinegar

The Salad

4 cups Fresh Baby Spinach

1 large Red Onion, thinly sliced

16oz. Mushrooms, sliced

1 Toss together the spinach, mushrooms, and red onion in a large bowl.
2 Combine the dressing ingredients and mix well with a whisk until sugar has dissolved and the dressing has emulsified.
3 TO serve: Portion the salad and dress with the vinaigrette.
