In a small bowl, whisk together the lemon juice, garlic, mustard, salt, pepper, and honey.

Drizzle the olive oil while whisking and continue ot whisk until the dressing is emulsified. Alternatively, combine everything in a mason jar with a tight fitting lod and shake the crap out of it until emulsified

If your dressing is to tangy, add move olive oil, to taste.

Add the thymee, if desired, and season to taste. Store in the fridge for up to a week. The olive oil will solidify a bit in the fridge. To soften, let the dressing stand at room temperature for a 15 minutes or so before using.
