Lemon Vinaigrette

An east Lemon Vinaigrette recipe that is a good one to have in your pocket.

  • 1 In a small bowl, whisk together the lemon juice, garlic, mustard, salt, pepper, and honey.
  • 2 Drizzle the olive oil while whisking and continue ot whisk until the dressing is emulsified. Alternatively, combine everything in a mason jar with a tight fitting lod and shake the crap out of it until emulsified
  • 3 If your dressing is to tangy, add move olive oil, to taste.
  • 4 Add the thymee, if desired, and season to taste. Store in the fridge for up to a week. The olive oil will solidify a bit in the fridge. To soften, let the dressing stand at room temperature for a 15 minutes or so before using.
