  • 1 Add the sliced red onion to 4 tbsp. Red Wine Vinegar and let stand for 15 minutes then drain.
  • 2 In a large bowl add the lettuce. Even arrange the bell oepper, cucumber, tomatoes, drained red onion, kalamata olives and feta cheese on top of the lettuce.
  • 3 In a medium bowl, combine the remaining vinegar, lemon juice, dijon mustard, honey, oregano, salt and pepper,
  • 4 Slowly drizzle in the olive oil into the dressing mixture, vigorously whisking until it thickened dressing is achieved Season to taste with salt and pepper.
  • 5 If not serving dressing right away, whisk again before adding to the salad as it may seperate over time.
  • 6 Serve salad with dressing on the side or you can toss salad with dressing just before serving.
