Add the sliced red onion to 4 tbsp. Red Wine Vinegar and let stand for 15 minutes then drain.

In a large bowl add the lettuce. Even arrange the bell oepper, cucumber, tomatoes, drained red onion, kalamata olives and feta cheese on top of the lettuce.

In a medium bowl, combine the remaining vinegar, lemon juice, dijon mustard, honey, oregano, salt and pepper,

Slowly drizzle in the olive oil into the dressing mixture, vigorously whisking until it thickened dressing is achieved Season to taste with salt and pepper.

If not serving dressing right away, whisk again before adding to the salad as it may seperate over time.

Serve salad with dressing on the side or you can toss salad with dressing just before serving.
