Whisk together the soy sauce, brown sugar, water, garlic, ginger, onion, salt, black pepper, oregano, cayenne, and paprika in large bowl. Add the chicken thighs. Cover and let marinade overnight in the fridge.

Preheat your grill or grill pan to medium-high heat and lightly oil.

Remove the chicken from the fridge and let stand for 30 minutes to come to room temp. Remove from the marinade, discarding the marinade. Grill the chicken for 10 minutes on each side or until cooked through.
