Instructions
  • 1 Preheat the oven to 400 degrees.
  • 2 Season chicken generously with salt and pepper. Sprinkle all over with italian seasoning.
  • 3 In a large oven safe skillet combine the oil and butter over medium-high heat.
  • 4 Once butter is melted, add the chicken and brown on each side for 1 to 2 minutes until you get a nice brown color. Transfer to a plate and set aside.
  • 5 In the same skillet, begin preparing the sauce by adding butter. Once melted, stif in the garlic and mushrooms and saute for 2 to 3 minues until the mushrooms are browned and the garlic os fragrant.
  • 6 Stir in the chicken stock, heavy cream, dijon mustard, salt and pepper. Bring to a boil, cook for 2 minutes at a high boil. Remove from heat.
  • 7 Return chicken to the skillet. Spoon the sauce over the chicken, then transfer the skillet into the oven to bake for 15 to 20 minutes until the chicken has cooked throgh and the saucce has reduced.
  • 8 Sppoon the mshroom sace over the chicken and serve. Good with white rice or egg noodles. You can substitute pork chops for he chicken to change it up.
