Process all Sofrito ingredients for 1 minute in a food processor. Put into a bowl and set aside.

Process all Garnish Sauce ingredients for 30 seconds and place into a condiment container.

Season the chicken on both side with salt and black pepper. Saute in a large skillet for 7 to 9 minues on each side. Do not move around as you are trying to crisp the skin. Remove from pan and set aside.

Saute onion for 5 minutes, add the rice and Sazon and saute for another 5 minutes. Deglaze the pan with chicken stick. Add the olives, capers, bay leaves, lemon juice, salt and pepper and Sofrito and mix well.

Place the chicken on top of the rice, bring to a simmer and then cover and place in a 350 degree oven for 20 minutes. Remove and let rest for minutes before remving the tpo. Top with a 1/2 cup of thawed peas.

Serve with the Garnish sauce.
