  • 1 Preheat oven to 400 degrees.
  • 2 In a large skillet, cook the beef until no longer pink. Drain the excess fat and return the beef to the skillet
  • 3 While the meat is browning, cook the pasta as the package directs.
  • 4 Add 2 tbsp. taco seasoning and 2 tbsp. water to the meat and heat, stirring frequently, until the liquid is gone.
  • 5 When the meat is bubbling, add the corn, black beans, diced tomtatoes, and rotele.
  • 6 In a small bowl mix the taco sauce and sour cream together with the remaining tbsp. of taco seasoning and whisk. Add the sauce mixute to the meat.
  • 7 Drain the pasta and add it to the meat. Stir well so that all of the ingredients get evenly distributed. Mix in 1 cup of the shredded cheese.
  • 8 Pour mixture into a greased 9 x 13 glass baking dish. Top with the remaining cheese and bake for 25 minutes until totally heated thru and the cheese has browned slightly.
  • 9 Remove from oven and let set for 10 minutes before serving.
