Rib salt on the roast.

Melt the bacon fat in a large skillet over medium-high heat and sear the prast on all sides until browned.

In a crock pot, add the beef stock, tomato paste, vinegar, Worcestershire, thyme, black pepper, garlic, chopped onion, lemon juice, and rest of the salt. Whisk until combined.

Add the meat and all of the pan juices to the crock pot. Cover and cook on low for 6 hours.

Add the potatoes and carrots and cook on high for another 2 hours.
