Venison Pot Roast

For when my son brings home a nice roast!

Instructions
  • 1 Rib salt on the roast.
  • 2 Melt the bacon fat in a large skillet over medium-high heat and sear the prast on all sides until browned.
  • 3 In a crock pot, add the beef stock, tomato paste, vinegar, Worcestershire, thyme, black pepper, garlic, chopped onion, lemon juice, and rest of the salt. Whisk until combined.
  • 4 Add the meat and all of the pan juices to the crock pot. Cover and cook on low for 6 hours.
  • 5 Add the potatoes and carrots and cook on high for another 2 hours.
