Cuban Pork Tenderloin

Amazing Tenderloin that goes great with Black Beans and Rice!

  • 1 Trim the silver from the tenderloim with a thin sharp knife. Mix the remaining ingredients in a gallon ziplock back. Add the pork, close the bag, and refrigerate for 3 to 4 hours, or overnight even.
  • 2 Prepare the grill for direct medium hot grilling. Lightly oil the cooking grate. Remove the pork from the fridge and let set for 30 minutes to come up to room temp. Remove the pork from the marinade and let drain briefly. Do not scrap off the solids. Plaec the pork on grill and close the lid. Cook, turning occasionally, until browned and the internal temperature on a meat thermometer inserted into the center registers 145 degrees for medium rare, about 20 to 27 minutes. Transfer to a carving board and let stand for 5 to 110 minutes.
  • 3 Serve with Black Beans and Rice and a twist of lime. Also great to make Cuban Sandwiches.
