Cajun Stuffed Pork Chops

Add Crayfish tails to the stuffing to knock it up a level!

  • 1 Preheat oven to 350 degrees. In a large skillet heat 2 tsp. of oil over medium high hheat and add the sausage. Cook, stirring for 5 minutes or until browned. Remove with a slotted spoon and set aside. Add the onion and cook for 5 minutes, then add the celery and garlic and cook for another 5 minutes. Add this to the bowl with the sausage and mix togehter. Let cook for 30 minutes then mix in the stock, crayfish meat, egg, and bread crumbs.
  • 2 Create a large pocket in each pork chop with a small knife, cutting the meat in half just to the bone. Fill the pocket with the sausage micture and season the outside with the House Essence, salt and black pepper.
  • 3 In a large oven prook skillet, heat the remaining oil over medium-high heat and sear the pork chops for 3 to 4 minutes per side, until golden brown on each side. Place the skillet in the oven and bake for 25 to 30 minutes until the pork chops are cooked through.
  • 4 Best served with Cheesy Grits and Collared Greens.
