Preheat oven to 350 degrees. In a large skillet heat 2 tsp. of oil over medium high hheat and add the sausage. Cook, stirring for 5 minutes or until browned. Remove with a slotted spoon and set aside. Add the onion and cook for 5 minutes, then add the celery and garlic and cook for another 5 minutes. Add this to the bowl with the sausage and mix togehter. Let cook for 30 minutes then mix in the stock, crayfish meat, egg, and bread crumbs.

Create a large pocket in each pork chop with a small knife, cutting the meat in half just to the bone. Fill the pocket with the sausage micture and season the outside with the House Essence, salt and black pepper.

In a large oven prook skillet, heat the remaining oil over medium-high heat and sear the pork chops for 3 to 4 minutes per side, until golden brown on each side. Place the skillet in the oven and bake for 25 to 30 minutes until the pork chops are cooked through.
