Shepard's Pie Supreme

  • 1 Place potatoes in a pot and cover with water that comes 1-inch over them. Bring to a boil and cook for 10 to 12 minutes. Drain and put back into the pot and set aside for a few minutes. Combine the sour cream, egg, and cream together. Add this mixture to the potatoes and massh until they are almost smooth.
  • 2 While the potatoes are cooking, head a large skillet over medium high heat. Add the oil to the hot pan and then add the steak. Brown the meat, and remove with a slotted spoon and set aside. Add the ground beef and brown until no longer pink, breaking it up with a wooden spatula. Add the chopped carrots and onions to the meat and cook for another 5 minutes, stirring frequently. In a second skillet over medium heat melt the butter. Once melted add the flour and cook for anothe 2 minutes. Whisk in the beef stock and worcestershire and cook for 2 to 4 minutes until it thickens. Add the gravy to the meat and vegetables. Now stir in the corn and the steak.
  • 3 Preheat the broiler to high.
  • 4 Using cooking spray, grease a 9 x 13 glass baking dish. Pour the meat and vegetable mixture into the baking dish. Spoon the potatoes over the meat mixture evenly. Sprinkle some paprika over the potatoes. and broil for 6 to 9 minutes, until the potatoes are evenly browned. Remove from oven and let set for 10 minutes before serving. Sprinkle the top with the fresh parsley before serving.
