Preheat oven to 400 degrees.

Cook sausage in a large Dutch oven over medium high heat, stirring occasionally, for 4 to 5 minutes or until browned. Remove sausage with a slotted spoon and drain on a paper towel, reserving the dripping in the Dutch oven.

Spinkle the chicken with salt, Cook in the sausage drippings over medium high heat for 2 to 3 minutes per side or until browned. Remove from the Dutch oven and set aside keeping warm.

Add the onions to the pot and cook for 5 minutes until transluscent and tender. Add the beans, tomatoes, chicken stock, okra, House Essence, chicken and sausage to the Dutch oven.

Bake, uncovered, for 40 minutes. Serve with a good crusty bread.
