Combine butter nd sugar in a stand mixer with a paddle attachement and beat until well blended. Add the banana, milk, sour cream, and eggs. Continue beating until blended.

Combine flour, salt, and baking soda in a bowl and stir together with w whisk. Add the flour mixture to the banana mixture 1/3 at a time, letting each addition fully mix before adding the next. Fold in the walnut or chocolate chips, if using.

We use a silicone insert to our loaf pan. If not, spray the loaf pan with non-stick spray. Pour the batter into the loaf pan and bake for 1 hour to 1 hour 15 minutes or until a wooden skewer stuck in the middle comes out clean. Cool in the pan for 10 minutes, then turn out oneo a rack to finish cooling.
