Combine all ingredients in a medium bowl untit just mixed. You do not want to overmix the batter.

You can use vegetable oil or a spray oil to coat a skillet over medium-high heat. I use a ladle to get about a 4 to 5 inch pancake and cook 3 at a time.

Cook for about 2 minutes and when you start to see bubbles appear, you know it is time to flip the pancake. Cook for another 1 minute or so.

Transfer to a plate and put a pad of butter on each. Keep warm as you make the other pancakes.

This usually yeilds about 6 pancakes, enough for the 3 of us to have 2 each.

To make Buttermilk pancakes, replace the Sprite with Buttermilk. No Sprite? No problem, you can use 1 cup of milk too.
