I had deep fried deviled eggs at a local restaurant and figured let's try something different.....

Bake bacon at 400 degrees for 10 to 15 minutes until crispy. Drain on a paper towel lined plate and set aside.

Cook 12 eggs until hard boiled by bringing a pot of water to rapid boil, add eggs, adn cook for exactly 15 minutes then remove from boiling water and put directly into an ice bath to stop cooking process.

Meanwhile in a saucepan or deep fryer, heat the oil to 350 degrees. The oil should be at least 3 inches deep.

Peel the cooled eggs and cut them in helf lengthwise. Remove the yolk and put into a bowl.

Mash the yolks and then add the cream cheese, sour cream, jalapeno juice, Dijon mustard, and granulated onion. Stir until fully combined and smooth.

Cut each strio of bacon into 6 pieces uniform in size. Slice the japaleno into circles.

Set up a breading station by craking the 13th egg into a bowl and whisking it. In a second bowl add the flour, and in a third bowl add the seasoned bread crumbs.

Coat the egg halves in the flour, then into the egg, and finally into the breadcrumbs. Fry the, for 1 to 2 minutes until golden brown in batches of no more then 4 eggs at a time. Remove wth a slotted spoon and transfer to a paper towel lined surface to absorb the excess oil.

Once all the eggs have been fried and cooled for at least 20 minutes, fill them with approx. 1 tablespoon of the yolk mixture. Top each with a slice of bacon and a sliced of jalapeno and dust with some somked paprika.
